Thanksgiving is largely a day of tradition and that tradition dictates you will have some leftovers filling your fridge and freezer. The dilemma is on how to use what we all know is coming. From hot turkey sandwiches, salads to stock making there are plenty of life left in the meal.
Hot turkey sandwiches are the best way to use up a good portion of all of the leftovers. Take some bread, or even some stuffing, and pile on the turkey, gravy and mashed potatoes. Microwave til hot and add on the cranberries. It will be revisiting one of the best meals of the year.
Cooked turkey can be used in a variety of other dishes too. They make a wonderful change of pace on salads. Use like you would for a grilled chicken salad but simply replace the meat. Fajitas also benefit from the use of turkey. Perhaps one of the best uses this time of year is to make a chili out of the bird.
After most of the meat is removed from the bone, it's time to do something with them. Take the bones and place them into a large pot. Add some water and bring to a boil. Reduce the temperature to a simmer and let cook for four hours and test the bones. If they shatter easily, you have made turkey stock. Let it cool then strain and freeze.
Turkey stock can be used anyplace water is used in your favorite recipe. Use it when you think that you want that little extra flavor or when water would just dilute the flavor. It makes a wonderful poaching liquid for chicken too. It can also be used as a base for soup.
